Safflower oil is extracted from the safflower seeds (seeds of Carthamus Tinctorius). The seeds are white and contain a high amount of proteins and good fat.

Safflower oil is light yellow in colour, very little flavour profile, mild smell and aroma, high smoke point and high oleic versions are stable offering a long fry and shelf life.

Safflower oil is a rich source of unsaturated fatty acids which helps to lower total or low-density lipoprotein (LDL or “bad”) cholesterol. However, it does not seem to lower other blood fats called triglycerides or raise high-density lipoprotein (HDL or “good”) cholesterol.
